So, a long time ago(a few months ago I’m always so dramatic), I was searching for a fat free base for cakes and stuff like that. Usually, all the recipes online have a nut base, which is a bad combination with sweet fruit, and also it’s fat, and you don’t want to always feel bad when eating a dessert, you wanna feel good, like you didn’t eat the unhealthiest thing on the planet! That’s how I stumbled on experimenting with dried mulberries. IT’S MULBERRY SEASON BY THE WAY! GO PICK THEM, GO DRY THEM, organic, delicious mulberries for everyone to grab!
These are the black mulberries, I found at a park near me, you can use these as well, Usually, the dried mulberries sold are from the white mulberries, which are just as easy to find! Anyway, I started experimenting with water, mulberries and dates. Different ratios and pulse times yielded different results, crusts, layers, and then… I stumbled across a crazy invention, in my own kitchen, RAW, VEGAN, TOFFEE!!! I was shocked, the mulberries turned into toffee, yes yes, toffee, gooey delicious toffee! So, today I’m gonna share this recipe, with the exact ratios and instructions, with 3 different “spins” on it.
So, without further ado, I present to you, the full recipe for the raw vegan toffee!
2 cups(around 400-450g) of dried mulberries.
1 teaspoon of lemon zest
Put all the ingredients in a food proccessor, and proccess them at max speed, slowly but surely, the mixture will form into a rotating ball, around your food proccessor blade, this has happened so many times to me, when you see the ball, it’s done.
You’re left with a sticky gooey piece of dough(the ball), that is very hard to resist munching on just as is (which is what I’ve done plenty of times).
Transfer the toffee mixture into a cutting board. You could eat it as is, I’m just gonna give you some variety now, so you may skip this part if you’re fine with just this delicious toffee, as far as I’m concerned, you’re done, you have your toffee, it’s delicious, you can eat it the way it is now. Anyway, seperate the mixture into three large pieces, one piece will be cooconut flavored, one will be chocolate(carob) flavored, and the other will be the standard flavor, or you can also add orange zest in addition to the lemon zest.
For the coconut flavored toffee you will need to put a third of the mixture(one large piece which you’ve just seperated) back into the food processor with 3 tablespoons of coconut powder, which is basically just dried coconut pulsed in the food proccessor.
For the chocolate(carob) flavored toffee you will need to put a third of the mixture(one large piece which you’ve just seperated) back into the food processor with 3 tablespoons of raw carob powder, or cacao powder if you can’t find carob powder(although I recommend avoiding cacao powder at all cost).
Pulse the mixture with the flavor additive until a new ball is formed, take the mixture out and place back onto the cutting board.
Now, if you wanna do it like me, you can either shape it into balls, which is super easy, you just grab the mixture and shape it into balls, or, you can take cookie cutters of your desired shape and slice the mixture, however, because it’s sticky, as toffee should be, it would be hard to just cut it, so here’s a good tip.
How to cut the toffee in shapes:
Rub a little bit of water onto the cutting board, then flatten your mixture onto it, take your cookie cutter and simply cut like you would regular cookie dough.
Once that’s done, place the toffee in the fridge, or in the the freezer if you plan on eating it much later, and just take it out and munch!
